On the title screen hold down the 'Blue', 'Yellow' and 'Green' buttons and then rotate the D-pad counter clockwise seven times (starting at 12 O'clock). The map screen will appear containing a red cross in the middle. Move the cross to whatever level you want and press the 'Red' button.
